Prime代表的是質數,象徵每個甜點的獨一無二。喜歡數字的Yopy認為製作甜點的過程接近科學,需要磅秤溫度計等儀器精密測量,像是做實驗般的產生物理化學變化,四年前開始拜師學藝做法式甜點,從網路起家的派慕,時常能在市集活動遇見Yopy騎著骨董腳踏車或金旺的身影,分享每日不同的甜品新作。

因為喜歡質數,Yopy特別選了2013年的5月3日做為派慕的開始。做為攤車之一的骨董腳踏車來自小時候的鄰居阿伯,Yopy說阿伯賣的古早味豆花是他最早的甜點記憶,想要延續小時候對於甜食的美好印象因而接手阿伯的腳踏車,改造後重新上路。第一次外出賣甜點選在聖誕節的文學館前,兩天下來只有不到幾百元的收入讓Yopy認知到創業並非只是挑選有人的地方去,創造出自己的市場才有競爭所在,而後便從神農街開始不斷流浪。

2016年初搬到現址位在育樂街的位置,今年開始預計能更穩定的開放店取甜點。一開始以餅乾、瑪德蓮及常溫蛋糕起家,現在大多數人想到派慕念念不忘的多為派塔類和慕斯甜點,這也巧妙呼應了派慕這個名字。不過Yopy並不想被這樣的印象受限,去年曾受邀去日本東京參加巧克力研習的他,希望自己能夠慢慢鑽研更多不同甜點的傳統技術,而他心目中最具代表的甜點則為新橋塔,這個涵蓋千層酥、卡士達和泡芙三種甜點技術的甜點,是他認為自我檢視技術的代表。

回想一開始回到台南稍微不適應的Yopy,現在想來覺得自己在做的事情,似乎也只能在故鄉台南發生。在台南的生活,休閒和工作是平衡的狀態。若是在其他地方,或許早被壓力壓得無法繼續,目前一天工作八小時的他,仍在時間的空隙中埋首閱讀,悉心鑽研甜點技術和歷史,在法國,如果講不出泡芙的名字是買不到甜點櫃中有各自代表意涵的泡芙,而Yopy也希望自己不只是懂得製作和品嘗。今年的願望是學習製作冰淇淋及和菓子,也想嘗試甜點和漆器結合的創作。

The name Patisserie Prime came from prime numbers and symbolize every desserts are unique. Yopy likes Mathematics and thinks the process of making desserts is similar as Science. Yopy learned how tp make French desserts four years ago started selling them online. Now you can buy his desserts in his studio or see him selling with his vintage bicycle in plenty outdoor events.

Due to his preference of prime numbers, Yopy started his business in May 3, 2013. The vintage bicycle is from his neighborhood and the owner used it selling soy pudding when Yopy was a kid. Yopy wants to use the bicycle selling his own desserts in a way continue his prime memory of having something sweet as comfort. He first sold his desserts in Xmas in front of National Museum of Taiwan Literature, but there were only few people buy his desserts that time, he understood that you can not only think of doing business where there are plenty people, but have to create your own specialty to attract people buy your product, he started his journey selling his desserts in different places from that time.

He set up his studio in Yule Street in the beginning of 2016, and wish to make the open time more steady from this year. He started Prime with cookies, madeleine and warm cakes, while now most people think of pies and Mousse. Yopy doesn’t want
to have this kind of limitation so he keeps testify the skills of how to make different traditional desserts. His ultimate one is New bridge pie which consists of pastry, Custard and Puffs, a dessert he uses to testify his own skills.

Yopy remembers he is bit no used to the lifestyle when he came back from Taipei, but he somehow thinks what he does can only happen in his lovely hometown. Life in Tainan always can have balance between work and leisure, while in other cities may easily being under too much pressure to continue one’s dream. Yopy keeps working 8 hours per day and reads in his free time as his hobby, to understand both the history and the origin of desserts. His goal of this year is learning the skills of ice cream and Ichigo Daifuku, also wants to try the combination of desserts and lacquer ware.
