台北人,台南生活十多年。

因為讀書的關係移居台南,學校位在原台南縣官田,王鼎元覺得自己一直和農村特別親近,在學時開始接觸社區營造,創辦了MIGA藝文空間,讓大學和社區原本的住民建立關係,透過活動的方式讓空間和人更有多元可能互動及交集。平時的生活中便充滿著農作的生產者,飲食上自然而然總能獲取新鮮無害的食材,因緣際會下接觸到蝦農,也意識到台灣對漁民的問題缺乏認知、不清楚環境的現況(包含汙染問題、養殖方式改善等等),退伍後他成立快樂鱻,希望將友善環境的漁法推廣、介紹給更多人,販售無毒繁殖的安心海產。

成立於2014年7月的快樂鱻,一開始僅販售養殖白蝦和吳郭魚,漸漸的也加入更多選擇的海產及水產,希望傳遞冷凍魚鮮度保存比多數台灣人飲食習慣選擇的"現撈"來的新鮮,而目前歐洲已經有許多國家禁止販售所謂現補的漁獲。快樂鱻目前在澎湖有160艘的手釣船,漁獲被釣到後即刻冷凍搭機4小時即可送到本島消費者手上。而在台南沿海快樂鱻合作的漁民多採延繩釣法,此種釣法對環境較友善,同時也是漁獲能盡可能保持最佳鮮度的方式。

而快樂鱻也不定期舉辦料理教室活動,讓消費者不僅買到新鮮食材也學習如何烹煮。目前他們也正和舒肥機構思合作可能,讓大家能用最省時省力的方式煮出美味料理。

提到在台南的生活經驗,王鼎元說他喜歡台南無論食衣住行各項生活機能都有許多個性小店,提供消費者不只連鎖店的產品和空間。他認為台南有其獨有的都市脈絡、文化底蘊,若只是因為發展而破壞這些從根本就迷人的部分,是很可惜的。對他而言思考:「一座城市的一棟建築物為什麼會存在於那裡?」、「海和路的關係又是什麼?」、「應如何定義街區的發展?」這些是很重要的問題。畢竟如果觀光只是為了串連,很多東西都會逐漸消失,最後什麼也不會留下。

區域推薦:大多時間都住在原台南縣的他們,很推薦大家多往麻豆、佳里、北門、新營、柳營、東山。

Dean Wang moved to Tainan for studying and due to the location based in Guantian, he feels he always has great connection to country life. He involved in community development projects in school and organized MIGA Art Space, made students and locals built relationships by attending events. It’s common for him to get fresh ingredients of food every meal because most of the time he is surrounded by farmers/planters. He met a shrimp farmer by chance and started to think about the fishing problem of Taiwan. He was aware that most people didn’t have the idea how serious the pollution was for the environment, so he founded Happy Fresh after finished his army, through this to promote environmental-friendly fishing skills and sell non-toxic seafood.

Founded in July, 2014, Happy Fresh started selling White shrimp and Tilapia and has added other kinds of seafood later on. They want to share the idea to public that freezing-preserved fishes is much fresher than what most people called “immediately fishing ” which actually no-preserved before delivered to the market. Many countries now in Europe ban to sell these non-preserved fishes. Happy Fresh has 160 hand fishing boat in Penghu. Their seafood can be delivered to Taiwan after fishing and being well-freeze within 4 hours. Fishermen they cooperated in Tainan use longline fishing which is a way less harm environment and keeps fishes fresh.

Happy Fresh holds cooking classes for people don’t have to worry how to cook the fresh seafood they provide. They are also discussing cooperation details with Sous Vide to provide another easy-cooking way to public.

Speaking of Tainan’s living experience, Dean says he enjoys this is a city with so much independent shops that offers plenty options no matter what you are looking for. Tainan has special city personality and culture background, he feels it’s a pity if there’s any damage happen only for development. “What made a building stands there?” “What’s the relationship between sea and road?” “How to define the block’s development?” These are important questions Dean think everyone should keep in mind. If tourism is only for connection, things will be disappeared little by little, eventually nothing left.
